LOW CALORIE MULTI LAYER DESSERT CUPS

This recipe is one that i came up with myself as a healthy alternative to other unhealthy stuff i eat as dessert and think tastes AMAZING so i would like to share it with you guys. Basically, it is a multi layer dessert with layers of chocolate mousse, strawberry mousse, custard, jelly and whipped cream. You may be thinking "what are you on about, that sounds like one of the most unhealthiest things you can eat" but not to worry, these sweet treats have less than 120 calories when the right ingredients are chosen!! Making these a perfect dessert when your trying to watch your weight. Read on to find out how to make these low calorie multi layer dessert cups.

Ingredients
Weight Watchers Chocolate flavoured mousse
Weight Watchers Strawberry flavoured mousse
Weight Watchers Vanilla flavoured custard
Aeroplane Jelly Lite (4 flavours)
Lite Whipped Cream

Directions

1. Take your Weight Watchers Chocolate flavoured mousse and follow the instructions on the back of the sachet.
a.) Pour 125ml skim milk into mixer bowl.
b.) Add contents of sachet.
c.) Beat on low speed of mixer (scraping powder from sides of mixing bowl) until thickened then whip at highest speed for 3-5 minutes.
d.) Spoon evenly into 4 of your dessert cups and chill for an hour.
Then that is your first delicious layer completed with only 31 calories in each serve.

2. Take your Weight Watchers Strawberry flavoured mousse and follow the instructions on the back of the sachet.
a.) Pour 125ml skim milk into mixer bowl.
b.) Add contents of sachet.
c.) Beat on low speed of mixer (scraping powder from sides of mixing bowl) until thickened then whip at highest speed for 3-5 minutes.
d.) Spoon evenly into 4 of your dessert cups and chill for an hour.
That is your second delicious layer completed with only 31 calories in each serve.

3. Then take your Weight Watchers Vanilla flavoured custard and follow the instructions on the back of the sachet.
a.) Empty contents of sachet into a small saucepan.
b.) Add 1 cup (250ml) of cold water to the pan and gently whisk until no lumps remain.
c.) bring to the boil, stirring continuously.
d.) Simmer for 1 minute, stirring continuously.
e.) Spoon evenly into 4 of your dessert cups and chill for an hour.
That is your third delicious layer completed with only 35 calories in each serve.

4. This is the time where your make your Jelly. I am using Aeroplane Jelly Lite because it is a healthier alternative to regular Jelly. I did have to go into the regular jelly range though to get the colour blue because the Jelly Lite range does not carry blue. Follow the instructions on the pack of the box.
a.) Empty contents of packet into a bowl and add 1 cup (250ml) of boiling water. Stir and dissolve well.
b.) Add 200ml of cold water and stir.
c.) Pour the jelly evenly into the 4 cups and refrigerate until firm (minimum 4 hours).
That is your fourth delicious layer completed with only 7 calories in each serve for the Jelly Lite range but 64 calories for the normal blue flavour. As you can see, the Jelly Lite range makes a huge difference in minimising the amount of calories in each dessert.

5. Once the desserts come out of the fridge after the Jelly is set, garnish with some Light whipped cream
Tips
- To use up all of the leftover jelly you can make "Jelly Cups" so that no products are wasted.

JELLY CUPS

Jelly cups are a fun and delicious party snack! Keep reading to find out how to make these super easy bites.
Prepare your cups by spraying them with cooking oil so that the jelly slides out easier when you go to eat it.

Jelly cups can also be quite a healthy treat if the right kind of Jelly is used. I'm using Aeroplane Jelly's "Jelly Lite" range which has much less calories than the normal Aeroplane jelly. Pick the flavours of jelly which are the same colours as your cups for the best visual effect.

Directions
1. Empty contents of packet into a bowl and add 1 cup (250ml) of boiling water. Stir and dissolve well.
2. Add 200ml of cold water and stir.
3. Pour the jelly into your cups and refrigerate until firm (minimum 4 hours).

Tips
- Makes 500ml of jelly
- Do not add fresh fruit otherwise jelly will not set

ROCKY ROAD PANCAKES

In this post i will be giving you the recipe to one of my favourite late night desserts, rocky road pancakes. This is also delicious as a breakfast or brunch meal and satisfies the sweet tooth without being too unhealthy.
Ingredients
1 and 1/3 cups flour
1 tablespoon baking powder
1 egg
2 tablespoons melted margarine or vegetable oil
1/4 teaspoon vanilla
2 tablespoon sugar
1/4 to 1/2 teaspoon salt
1 and 1/4 cups milk

Method
Combine flour, sugar, baking powder and salt in a large bowl. Melt the margarine in the microwave for 30 sec. Beat the egg in a small bowl. Combine the beaten egg, milk, melted margine/oil and vanilla in a small bowl. Make a well in the centre of the large bowl and pour the contents in the small bowl. Stir quickly until the batter comes down freely from the sides of the bowl, it should be lumpy (do not overmix!). Lightly oil a skillet on medium heat. Drop the batter in small amounts with a ladle. Cook the pancakes until bubbles appear on the surface. Flip the pancakes and cook the other side. Transfer cooked pancakes to a plate.

Tips
- Finish your pancakes off with lashes of your favourite sauce, crushed nuts, marshmellows and some sifted icing sugar.
- With my pancakes i used chocolate sauce but you can use maple syrup, honey, caramel, strawberry or coffee sauce.
- Think about adding some whipped cream if you want to go all out.
- In the picture i do not have any nuts on mine, this is because my little sister is allergic so i'm not able to keep any nuts at my house but i would add some for flavour, it gives it a really filling taste.
- Layer your pancakes on your plate starting from largest to smallest to create a stacked effect.
